HYDRA HYDRAULIC GRID DIVIDER

This innovative grid system, applicable to all semiautomatic models, it has been studied to divide high hydration leavened dough, without stress and degas them. The result will be a perfect alveolar structure even after cooking.

The working cycle of the HYDRA hydraulic grid divider provides cutting by manual closing of the interchangeable side grid and operating by the joystick to raise and lower the pressing plate. Furthermore, it offers the possibility to make the only pressing by joystick and closing of top cover.

Unlike the DSSGRID it does not have the lower knives and it is faster in the cutting phase thanks to the halved stroke of the basket.
