DSS with grids HYDRAULIC DIVIDER AND PRESS

This innovative grid system, applicable to all semiautomatic models, it has been studied to divide high hydration leavened dough, without stress and degas them. The result will be a perfect alveolar structure even after cooking.

The working cycle provides cutting by manual closing of the interchangeable side grid and operating by the joystick to raise and lower the pressing plate. Furthermore, it offers the possibility to make the only pressing by joystick and closing of top cover.

The DSS with grids hydraulic divider and press allows to divide medium/strong dough by the lower knives.
